How to Make Turkey Pot Pie

When the weather begins to cool off and the days become shorter, many families want traditional comfort foods. Chicken pot pie is a popular winter dish, yet turkey pot pie offers a savory alternative as well as great way to use Thanksgiving leftovers in an inventive way. Follow these steps to learn how to make turkey pot pie--an alternate version of the ultimate comfort food.

Steps

  1. Gather all the fresh ingredients for turkey pot pie, including the vegetables and flour, and place them on the kitchen counter for easy access.
  2. Preheat the oven to 400 degrees Fahrenheit (204.4 Celsius).
  3. Take out a heavy frying pan and place on the stove.Turn up the heat to medium.
  4. Place 2 tablespoons (30 mL) of butter (or oil) in the pan and let it melt.
  5. Add the leeks or onion, carrots and celery to the skillet.Turn up the heat to medium level and sauté.
    • Stir the vegetables for about 10 minutes. Allow the vegetables to soften without becoming overly browned.
  6. Pour the vegetables out of the frying pan into a bowl or other container and let sit on the kitchen counter.
  7. Add another tablespoon of butter (or oil) to the frying pan.
  8. Pour mushrooms into the frying pan and turn heat to medium.sauté in the pan for 10 minutes, allowing the mushrooms to become tender.
  9. Pour the mixture of cooked vegetables back into the frying pan and mix with the mushrooms.
  10. Pour in flour to the mixture and stir over heat for 1 minute.
  11. Begin adding in the broth, stirring continuously.
    • Let the mixture simmer, stirring as it thickens. Continue stirring until the flour and vegetable mixture becomes extremely thick.
  12. Add in the leftover turkey as well as the thyme, salt and pepper.Set aside 1 tablespoon of the cream or half and half and pour in the rest. Stir the mixture very well and then pour into a bowl to cool off.
  13. Take out the pre-made pie crusts and place 1 into a pie plate.Using your fingers, mold it around the edges of the pie plate making a crimped edge.
  14. Fill the pie crust with the cooked turkey and vegetable mixture.
  15. Place the other raw pie crust on top of the turkey mixture in the first pie crust to create a top layer.Gently press down on the top crust, and using your fingers, mold the top and bottom edges of the crusts together.
  16. Take a fork and make air holes in the top of the crust.
  17. Brush the crust with the remaining cream or half and half.
  18. Place in the oven and bake for 40 minutes.The crust should be brown and the filling should be hot and bubbling.
  19. Allow the pie to cool for 15 minutes before serving.
  20. Finished.
