How to Make Toffee Nuts

Three Methods:

Toffee nuts are a delicious snack to have out at a party. You can make toffee nuts with a wide variety of nuts and a little butter and sugar. Once you mix the nuts and coating, you'll need to cool the toffee nuts for a few hours before serving.

Ingredients

Toffee Pecans

  • 1 cup (240 mL) unsalted butter
  • 1/2 cup (120 mL) light brown sugar
  • 1/2 cup (120 mL) granulated sugar
  • 1 tablespoon (15 mL) coarse kosher salt
  • 1 teaspoon (5 mL) pure vanilla extract
  • 3 and 3/4 (900 mL) cups raw pecans

Toffee Almonds

  • 2 cups (480 mL) butter
  • 2 cups (480 mL) white sugar
  • 1/ 4 teaspoon (1.25 mL) salt
  • 2 cups (480 mL) semisweet chocolate chips
  • 1 cup (240 mL) finely chopped almonds

Combination Toffee Nuts

  • 2 cups (475 mL) sugar
  • 6 tablespoons (90 mL) butter
  • 1 1/2 cups (350 mL) pecans
  • 1 1/2 cups (350 mL) walnuts
  • 1 cup (240 mL) peanuts
  • 1 cup (240 mL) pine nuts
  • 1 tablespoon (15 mL) sea salt
  • 2 teaspoons (10 mL) freshly grated nutmeg

Steps

Making Toffee Pecans

  1. Melt your butter.Measure out your butter and place it in a saucepan. Set the heat to low and keep the butter over the stove until it melts.
  2. Add your sugars, salt, and vanilla.Increase the heat slightly. Add your sugars, salt, and vanilla to the mixture. Stir everything together with a wooden spoon.
  3. Stir until the mixture thickens.Keep the mixture on the stove over medium-low heat. Stir continuously until the mixture thickens to a sticky consistency similar to toffee.
  4. Add the pecans.Keep the heat on. Pour the pecans into the mixture. Stir the mixture constantly, coating the nuts completely in sugar.
  5. Stir until the mixture browns.Stir the pecans in the butter and sugar mixture constantly over medium-low heat. Turn the heat off and stop stirring once the mixture has turned a dark brown color. This usually takes between five to seven minutes.
  6. Pour the mixture onto a cookie sheet.Place a piece of parchment paper on a cookie sheet. Pour your nut mixture on the sheet. Use a spatula to spread the mixture in an even layer across the sheet.
  7. Break the nuts apart after they cool.Set the mixture in a cool place in your kitchen. Leave the nuts until they cool and harden slightly. At this point you can break the nuts apart and then transfer them to a bowl. Cooling times vary depending on the heat of your kitchen, but most nuts should cool within a few hours.
  8. Store your nuts.If you don't eat all the nuts at once, store them in an airtight container. They should stay good for three to five days.

Making Toffee Almonds

  1. Combine the butter, sugar, and salt in a saucepan.Choose a medium to large sized saucepan. Use a spoon to mix everything together into a smooth, even mixture.
  2. Boil the mixture until it's a dark, amber color.Place the saucepan over the stove at medium heat. Stir the mixture constantly until it comes to a boil. Continue stirring until the mixture browns into a dark, amber color.
  3. Pour the toffee on a baking sheet.Cover a baking sheet with aluminum foil. Use a spatula or spoon to spread your toffee onto the baking sheet in one even layer.
  4. Spread the chocolate chips over the mixture.Measure out your chocolate chips. Using your hands, sprinkle the chocolate chips in an even layer over your toffee mixture.
  5. Spread the nuts over the chocolate.Add your nuts to the mixture. Spread them evenly over the chocolate and then press them slightly into the mixture.
  6. Refrigerate your mixture.Keep the mixture in the refrigerator until the mixture hardens. Times will vary depending on the temperature of your fridge. Most mixtures should be hardened within 24 hours.
  7. Break the pieces apart.Once set, take your baking sheet out of the fridge. Use your hands to break the nut mixture apart into small pieces for serving.
  8. Store your nuts.Your nut mixture can be stored in an airtight container.It should keep for around three to five days.

Making Combination Toffee Nuts

  1. Heat your water, sugar, and butter over the stove at medium-high heat.Measure out your water, sugar, and butter. Place the skillet over the stove at medium high heat. Heat the mixture until the butter is melted.
    • This generally takes around three to four minutes.
  2. Add your nuts to the mixture and stir for 12 to 15 minutes.Keep the heat on and add your nuts. Stir the nuts into the butter mixture so they're evenly coated. Stir the mixture frequently for about 12 to 15 minutes, stopping when the sugar begins to look powdery.
  3. Stir continually for 10 minutes or until the coating is dark brown.Switch to stirring constantly and stir for approximately 10 minutes. You should stir until the mixture is dark brown and has a glossy appearance.
  4. Add the salt and nutmeg.Remove your skillet from the heat. Add your salt and nutmeg and stir everything together.
  5. Transfer your mixture to a baking tray.Use a spatula or spoon to add your mixture to a greased baking sheet. Spread the mixture over the sheet so it forms an even layer.
  6. Let the nuts cool.You can either set the mixture aside somewhere in your kitchen or refrigerate it. Let it cool completely. Times will very depending on the temperature. Break the nuts apart with your hands once they cool.
  7. Store your nuts.Your nuts can be stored in an airtight container. They should keep for three to five days.
